You can learn how to prepare, cook and serve a mouthwatering standing rib roast in the new “Pro Tip” video featuring Brian Quinn, a Culinary Arts instructor at Milwaukee Area Technical College.
The video is part of MATC’s how-to series in which the college’s expert instructors explain simple yet important life tasks, helping viewers increase their knowledge and perhaps consider taking courses at MATC.
In the video, Quinn, an MATC instructor since August 2022, demonstrates how to prep an 18-pound standing, bone-in rib roast by removing sections of fat, seasoning the meat and tying it with butcher twine.
Chef Quinn’s little tips are just enough for consumers to improve their preparation regime. His instructions are easy to follow and offer some humor to take off some stress.
Cook the roast in the oven for 10 minutes per pound at 300 degrees, so it reaches an internal temperature of 130 degrees. For example, an 18-pound roast would cook for 180 minutes, or three hours. Use a large slicing knife, or a chef’s knife, to cut one-inch thick, medium rare pieces.
